SO~ this is how I have spent my whole day. Baking a cake and making icing, decorating and protecting my creation from 5 kids.(Leah is sleeping!) I tried a new recipe for icing which does not have Crisco in it, just butter instead of half and half. You know what happens when you try a new recipe...lots of tasting! There wasn't enough powdered sugar initially, and lots and lots of butter. Needless to say instead of 4 cups of sugar, there ended up being 14. Compared to the amount of butter, there was still a little less than usual. We ended up with extra of course, so now we will also have pink icing on our 4th of July cupcakes! In the end all that matters is that Emma loves her cake! The top layer I cut in half and put a layer of jam and icing on. I WILL be having a piece!
We hope to go to Natural Bridge next week for a day trip, just to do something cheap with the kids for the week. I hope to get lots of good pics, we've never been there! Gotta go make meatballs for the party now. Happy 5th Birthday Emma Grace!
