Pumpkins and Potatoes

The World’s Best Potato Salad- I am happy to share what is inside, but you will have to guess on amounts. It’s an “eyeball it” recipe of mine. {ingredients follow}

Sam’s Potato Salad

5-6 red potatoes, cubed and cooked for 20 minutes {or 9 minutes from boil}

freshly cooked bacon, chopped

green onions, chopped

mayonnaise, Dijon mustard, salt, fresh ground pepper {mix these to taste, I like mine to have some bite}

Drain potatoes, allow to cool until no longer steaming, but still warm. I also salt and pepper them at this stage.

Mix potatoes into wet ingredients, add onion and bacon.

I recently started adding dill the the wet ingredients, and we love it!
